Instructions

  1. Begin by boiling a large pot of salted water. Add the penne pasta and cook until al dente according to package instructions. Drain and set aside.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the sliced chicken breasts with salt and pepper, then add to the skillet. Cook for about 5-7 minutes until golden brown and cooked through. Remove from pan and set aside.
  3. In the same skillet, reduce heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant. Pour in chicken broth and lemon juice, scraping any browned bits from the bottom of the pan. Stir in lemon zest and let the sauce simmer for 2-3 minutes to reduce slightly.
