- 2 large sweet potatoes, sliced
- 1 pound ground turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh herbs for garnish (parsley or cilantro)
Instructions
- Preheat oven to 400°F (200°C). Lightly oil a baking dish.
- Arrange sweet potato slices in an even layer in the dish. Drizzle with 1 tablespoon olive oil, season with salt and pepper, and bake for 20 minutes.
- Meanwhile, heat remaining olive oil in a skillet over medium heat. Add chopped onion and cook until translucent.
- Add garlic, ground turkey, paprika, cumin, salt, and pepper. Cook until turkey is browned and cooked through, about 8 minutes.
- Spread cooked turkey mixture evenly over the roasted sweet potatoes.
- Return to oven and bake for an additional 15 minutes until the top is crispy.
- Garnish with fresh herbs and serve warm.

- You can add shredded cheese or a dollop of sour cream for extra flavor.
