Ingredients

  • 2 large chicken breasts, sliced
  • 12 oz fettuccine or penne pasta
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken slices with Cajun seasoning.
  3. Cook chicken in the skillet until browned and cooked through, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, sauté sliced peppers and garlic for 3-4 minutes until tender.
  5. Reduce heat to low, add heavy cream and Parmesan cheese, stirring until smooth. Season with salt and pepper.
  6. Return chicken to the skillet, toss with the sauce and cooked pasta until well coated.
  7. Garnish with chopped parsley and serve hot.
