- 2 cups orzo pasta
- 1 lb chicken breasts, sliced
- 2 tbsp Cajun seasoning
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook orzo pasta in boiling salted water until al dente, drain and set aside.
- Coat chicken slices with Cajun seasoning and salt.
- Heat olive oil in a skillet over medium heat, cook chicken until golden and cooked through. Remove from pan.
- Add garlic and peppers to the same skillet, sauté until peppers are tender.
- Pour in chicken broth, bring to simmer, then return chicken to the skillet. Mix well.
- Serve the Cajun chicken mixture over the cooked orzo, garnished with fresh parsley.
Notes
- Adjust Cajun seasoning to taste for spiciness.
- For extra flavor, sprinkle with grated Parmesan cheese before serving.
- For a gluten-free version, use gluten-free pasta.
