Instructions
- Season the chicken breasts generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- Lower the heat to medium and add the minced garlic to the same skillet. Sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. Add the chopped spinach and cook until wilted. Season with salt, pepper, and a squeeze of fresh lemon juice.
- Return the cooked chicken to the skillet, spooning some of the creamy sauce over the top. Simmer for an additional 2-3 minutes to allow flavors to meld. Serve immediately, garnished with extra Parmesan or fresh herbs if desired.
