Instructions
- In a food processor, blend the pitted and chopped Medjool dates with one tablespoon of honey until sticky and well combined.
- In a mixing bowl, gently fold ricotta, vanilla extract, sea salt, and remaining honey until smooth.
- Take a small portion of the ricotta mixture, flatten in your palm, add a spoonful of the date mixture, and roll into a bite-sized ball. Repeat with remaining ingredients.
- Roll each ball in crushed pistachios for added crunch and flavor, if desired.
- Place bites on a parchment-lined tray and refrigerate for at least 30 minutes to set.
- Garnish with extra crushed pistachios and mint leaves before serving.
