  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix mashed bananas and melted butter.
  3. Add sugar, beaten egg, vanilla, and cinnamon. Mix well.
  4. In a separate bowl, combine baking soda, flour, and salt. Gradually add to banana mixture, stirring gently.
  5. Pour half of the batter into the pan. Mix brown sugar and cinnamon into the remaining batter to create the swirl.
  6. Spoon the cinnamon mixture on top of the first layer and swirl with a knife.
  7. Pour the remaining batter over the swirl. Swirl again if desired.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
