- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, softened

- 1 shot of espresso or 2 teaspoons of instant espresso powder
- 1/2 cup mini chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray or line with parchment paper.
- In a large bowl, beat the softened butter and sugar until creamy. Add eggs one at a time, blending well. Mix in mashed bananas, vanilla extract, and espresso powder.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture, stirring gently until combined. Fold in chocolate chips if using.
- Pour batter into the prepared loaf pan, smoothing the top. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For a richer chocolate flavor, increase the cocoa powder slightly or add more chocolate chips.
- Use ripe bananas for maximum sweetness and flavor.
- Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 1 week.
