  • Total Time: 1 hour 30 minutes
  • Yield: 1 loaf (8-10 slices)

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 shot of espresso or 2 teaspoons of instant espresso powder
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray or line with parchment paper.
  2. In a large bowl, beat the softened butter and sugar until creamy. Add eggs one at a time, blending well. Mix in mashed bananas, vanilla extract, and espresso powder.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture, stirring gently until combined. Fold in chocolate chips if using.
  4. Pour batter into the prepared loaf pan, smoothing the top. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, increase the cocoa powder slightly or add more chocolate chips.
  • Use ripe bananas for maximum sweetness and flavor.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 1 week.
  • Freeze slices or the entire loaf for up to 3 months for long-term storage.
