- 1 lb boneless, skinless chicken breasts
- 1 cup wild rice
- 4 cups chicken broth
- 1 onion, chopped
- 3 carrots, diced
- 3 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup heavy cream or half-and-half
Instructions
- Place chicken breasts, rice, onion, carrots, celery, garlic, thyme, salt, and pepper in the slow cooker.
- Pour chicken broth over ingredients and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked and rice is tender.
- Remove chicken, shred with two forks, and return to the pot.
- Stir in heavy cream or half-and-half, cook for another 15 minutes.
- Taste and adjust seasoning before serving garnished with fresh herbs.

- Can substitute with cooked rotisserie chicken for quicker preparation.
- Use dairy-free cream alternatives if needed.
