- 1 lb smoked sausage, sliced
- 4 cups diced potatoes (peeled or unpeeled)
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1 cup sour cream
- 1/2 cup chopped green onions
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: crispy bacon bits for topping
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter and gather all ingredients.
- Boil diced potatoes until tender, about 10 minutes. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Add smoked sausage slices and cook until browned and crispy, about 5-7 minutes. Remove from heat.
- In a large bowl, combine cooked potatoes, smoked sausage, ranch seasoning, sour cream, and half of the cheddar cheese. Mix gently and season with salt and pepper.
- Transfer the mixture into the prepared baking dish. Sprinkle remaining cheese on top.
- Bake uncovered for 20-25 minutes until bubbly and golden brown.
- Once done, garnish with chopped green onions and optional bacon bits. Serve hot.
Notes
- You can substitute smoked sausage with turkey or chicken sausage for a leaner version.
- This dish can be prepared ahead of time, covered, and refrigerated for up to 24 hours before baking.
- Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
