  • 1 packet ranch seasoning mix
  • 1 cup sour cream
  • 1/2 cup chopped green onions
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: crispy bacon bits for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter and gather all ingredients.
  2. Boil diced potatoes until tender, about 10 minutes. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Add smoked sausage slices and cook until browned and crispy, about 5-7 minutes. Remove from heat.
  4. In a large bowl, combine cooked potatoes, smoked sausage, ranch seasoning, sour cream, and half of the cheddar cheese. Mix gently and season with salt and pepper.
  5. Transfer the mixture into the prepared baking dish. Sprinkle remaining cheese on top.
  6. Bake uncovered for 20-25 minutes until bubbly and golden brown.
  7. Once done, garnish with chopped green onions and optional bacon bits. Serve hot.
