- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 6 cups beef or chicken broth
- 1 package (9 oz) tortellini
- 2 cups fresh spinach
- 1 can (14.5 oz) diced tomatoes
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Parmesan cheese and basil for garnish
Instructions
- In a bowl, combine ground beef, bread crumbs, Parmesan, egg, oregano, salt, and pepper. Form into small meatballs.
- Heat olive oil in a large pot over medium heat. Brown the meatballs for about 5 minutes, then set aside.
- In the same pot, add garlic and cook until fragrant. Pour in broth and diced tomatoes, bring to a simmer.
- Add meatballs back to the soup and cook for 10 minutes.
- Stir in tortellini and cook for an additional 5 minutes until tender.
- Add spinach and cook until wilted. Serve hot, garnished with Parmesan and basil.
Notes
- Feel free to add crushed red pepper flakes for a spicy kick.
- You can substitute beef with turkey or chicken for a lighter version.
