- 1.5 pounds beef stew meat, cubed
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 potatoes, diced
- 1 cup corn kernels
- 4 cups beef broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add beef cubes and cook until browned on all sides. Remove and set aside.
- In the same pot, add onions and garlic; sauté until translucent.
- Add the beef back into the pot along with carrots, potatoes, corn, paprika, cumin, salt, and pepper. Stir to combine.
- Pour in beef broth, bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until beef is tender and flavors meld.
- Garnish with chopped parsley before serving.
Notes
- You can substitute with chicken or vegetarian options for variation.
- For thicker stew, mash some potatoes into the broth before serving.
