- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups potatoes, diced
- 1 can corn kernels
- 1 can black beans, drained
- 4 cups beef broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Shredded cheese and chopped green onions for topping
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Remove excess fat.
- Add chopped onions and garlic; sauté until translucent.
- Stir in diced potatoes, corn, black beans, salt, and pepper.
- Pour in beef broth and bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
- Stir in heavy cream and cook for another 5 minutes until heated through.
- Serve hot, topped with shredded cheese and chopped green onions.
Notes
- For a spicier version, add chopped jalapeños or cayenne pepper.
- You can substitute ground chicken or turkey for beef.
- Use freshly grated cheese for the best flavor.
