- 4 large zucchinis sliced into thin rounds
- 1 cup marinara or pizza sauce
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional)
- Fresh basil for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Spread a thin layer of marinara sauce at the bottom of the dish.
- Arrange a layer of zucchini slices over the sauce.
- Spread more sauce over the zucchini, then sprinkle with mozzarella and Parmesan cheese.
- Repeat layers until all ingredients are used, ending with cheese on top.
- In a small bowl, mix olive oil, garlic, oregano, and red pepper flakes; drizzle over the top.
- Bake uncovered for 30-35 minutes until cheese is bubbly and golden.
- Garnish with fresh basil before serving.
