- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: crushed red pepper flakes, herbs for seasoning
Instructions
- Preheat oven to 375°F (190°C).
- Cut a slit into the side of each chicken breast to create a pocket.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add spinach and cook until wilted. Season with salt and pepper.
- Stuff each chicken breast with the spinach mixture and shredded cheese.
- Secure with toothpicks if needed, then place on a baking dish.
- Bake uncovered for 25-30 minutes until chicken is cooked through and cheese is melted.
Notes
- You can substitute spinach with kale or other leafy greens.
- For extra flavor, sprinkle herbs or spices before baking.
- Serve with a side of roasted vegetables or a light salad.
