- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano or Italian seasoning
- Salt and freshly ground black pepper to taste
- Wooden or metal skewers
Instructions
- Mix minced garlic, grated Parmesan, olive oil, lemon juice, dried herbs, salt, and pepper in a bowl to prepare the marinade.
- Place chicken pieces in a sealable bag or shallow dish, pour marinade over, and marinate in the refrigerator for at least 30 minutes, up to 2 hours.
- Thread marinated chicken onto skewers, alternating directions for even cooking. Soak wooden skewers in water for 30 minutes if using.
- Preheat grill to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
Notes
- Sprinkle additional Parmesan during the last few minutes of grilling for extra flavor.
- Check internal temperature to reach 165°F (74°C) for safety.
- Use a charcoal grill for a smoky aroma if preferred.
