Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup fresh pineapple chunks or canned pineapple in juice
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch (optional, for thickening)
- Salt and pepper to taste
- Cooking oil or non-stick spray
Instructions
- Whisk together soy sauce, brown sugar, rice vinegar, garlic, and ginger in a bowl until sugar dissolves to create a flavorful marinade.
- Marinate the chicken breasts in the mixture for at least 30 minutes in a resealable plastic bag or shallow dish.
- Heat a skillet over medium-high heat, add cooking oil, and sear each chicken side for 4-5 minutes until golden brown.
- Add pineapple chunks and reserved marinade to the skillet, reduce heat to medium, and simmer for 10 minutes to meld flavors.
- If a thicker sauce is desired, dissolve cornstarch in water, stir into the skillet, and cook for an additional 2 minutes until thickened.
Notes
- Use ripe pineapple for the best flavor and sweetness.
- Adjust the amount of brown sugar to suit your preference for sweetness.
- Add crushed red pepper flakes for a spicy kick if desired.
- Garnish with chopped green onions or cilantro for a fresh touch.
