- 2 cups cooked rice
- 1 lb grilled chicken breasts, diced
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup shredded cheese
- 1/4 cup chopped cilantro
- 1/4 cup sliced jalapenos (optional)
- 1/2 cup creamy guacamole
- 1 lime, cut into wedges
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Marinate chicken with olive oil, chili powder, cumin, salt, and pepper. Grill until cooked through and diced.
- Prepare rice according to package instructions.
- Assemble bowls by layering rice, grilled chicken, tomatoes, lettuce, cheese, and jalapenos.
- Top with guacamole and cilantro. Squeeze lime juice over the top before serving.
Notes
- You can substitute grilled beef or tofu for chicken.
- Adjust spice levels with more or less jalapenos.
- Serve with hot sauce or salsa for added flavor.
