Instructions
- In the slow cooker, brown the ground beef until fully cooked and drain excess fat.
- Add taco seasoning, diced tomatoes with chiles, beef broth, and uncooked pasta to the slow cooker.
- Stir everything together, cover, and cook on low for 4-5 hours or until pasta is tender.
- Stir in shredded cheese and let it melt for about 10 minutes.
- Serve hot topped with cilantro, jalapenos, and optional sour cream.
Notes
Ensure pasta is fully submerged in the liquid to cook evenly. For a creamier texture, add a splash of heavy cream or cream cheese during the last 30 minutes.
