Instructions
- Mix the mashed potatoes, cheddar cheese, Parmesan, chives, garlic powder, smoked paprika, salt, and black pepper in a large bowl until well combined.
- Shape the mixture into balls about 1 to 1.5 inches in diameter, then flatten into patties or keep as mini balls.
- Prepare three shallow bowls with flour, beaten egg, and panko crumbs. Dip each puff into flour, then egg, then coat with panko. Repeat for extra crunch if desired.
- Preheat the air fryer to 400°F (200°C). Lightly spray the puffs with cooking spray or brush with olive oil.
- Arrange the puffs in a single layer in the air fryer basket, ensuring they aren’t touching. Cook for 10-12 minutes, flipping halfway, until golden and crispy.
