- 1 cup panko breadcrumbs
- 2 beaten eggs

Instructions
- Combine cooled mashed potatoes with shredded cheese, Parmesan, garlic powder, onion powder, herbs, salt, and pepper in a large bowl. Mix thoroughly.
- Form the mixture into small balls or puffs using your hands or a scoop.
- Dip each ball into beaten eggs, then coat with panko breadcrumbs, pressing gently.
- Preheat the air fryer to 400°F (200°C). Lightly spray the basket with cooking spray.
- Place coated potato puffs in a single layer in the basket, leaving space between them. Spray tops lightly with cooking spray.
- Cook for 10-12 minutes, turning halfway, until golden and crispy.
