Instructions
- Cook the gnocchi according to package instructions until tender. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add heavy cream to the skillet, stirring to combine. Bring to a gentle simmer.
- Mix in the cooked gnocchi and fresh spinach, cooking until the spinach wilts.
- Stir in crumbled feta cheese, and season with salt and pepper. Cook until heated through and sauce thickens slightly.
- Serve hot, garnished with optional grated Parmesan and fresh herbs if desired.
