A flavorful and creamy Italian sausage soup packed with savory sausage, fresh herbs, and Parmesan cheese, perfect for chilly evenings or quick weeknight dinners

Ingredients

  • 1 pound Italian sausage, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove and set aside.
  2. In the same pot, add chopped onion and minced garlic. Sauté until translucent and fragrant.
  3. Pour in chicken broth and bring to a simmer. Add cooked sausage back into the pot.
  4. Reduce heat and stir in heavy cream and Parmesan cheese until melted and smooth.
  5. Add spinach and cook until wilted. Season with salt and pepper to taste.
  6. Serve hot, garnished with extra Parmesan if desired.
