- 1 pound Italian sausage, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups spinach leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove and set aside.
- In the same pot, add chopped onion and minced garlic. Sauté until translucent and fragrant.
- Pour in chicken broth and bring to a simmer. Add cooked sausage back into the pot.
- Reduce heat and stir in heavy cream and Parmesan cheese until melted and smooth.
- Add spinach and cook until wilted. Season with salt and pepper to taste.
- Serve hot, garnished with extra Parmesan if desired.
Notes
- You can substitute spinach with kale or Swiss chard for an alternative green.
- For a spicier twist, add red pepper flakes during sautéing.
