- 1 pound Italian sausage, casings removed
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (16-ounce) package potato gnocchi
- 2 cups fresh spinach, chopped

- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat. Add Italian sausage, cook until browned and crumbly; remove excess fat.
- Add diced onion and cook until translucent. Stir in minced garlic and cook for 1 minute.
- Pour in chicken broth, bring to a boil. Add gnocchi and cook according to package instructions, about 3-4 minutes.
- Reduce heat to low, stir in heavy cream and chopped spinach. Cook until spinach wilts and soup is heated through.
- Season with salt and pepper to taste. Garnish with fresh basil or parsley before serving.
