- 1 pound (450g) chicken breasts
- 1 package (9 oz) refrigerated tortellini
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place chicken breasts in the crockpot and season with salt, pepper, and Italian seasoning.
- Add minced garlic, chicken broth, and heavy cream over the chicken.
- Cook on low for 4-5 hours or until the chicken is cooked through and tender.
- Shred the cooked chicken using two forks and return to the crockpot.
- Add tortellini and chopped spinach to the crockpot, stirring to combine.
- Cook on high for 20-25 minutes until the tortellini is tender and heated through.
- Sprinkle with shredded mozzarella cheese, cover, and let melt for 2 minutes.
- Serve hot, garnished with fresh parsley and an extra sprinkle of cheese if desired.
Notes
- You can substitute fresh spinach with kale or basil for variation.
- For a spicier version, add red pepper flakes.
- This recipe can be easily doubled to serve more people.
