  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat, drain excess fat.
  2. Add chopped onion and minced garlic; cook until softened.
  3. Stir in chili powder, cumin, salt, and pepper.
  4. Add beef broth, corn, and kidney beans; bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in heavy cream and shredded cheddar cheese; cook until cheese melts and soup thickens.

Notes

For a thicker soup, mash some beans before adding. You can substitute ground turkey for beef for a leaner option.
