- 1 pound Italian sausage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 package (9 oz) refrigerated tortellini
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- Grated Parmesan cheese for serving
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove and set aside.
- In the same pot, add onion and garlic; sauté until translucent.
- Add chicken broth, diced tomatoes, carrots, celery, basil, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15 minutes to allow flavors to meld.
- Stir in cooked sausage and tortellini. Cook until tortellini is tender, about 5 minutes.
- Serve hot, garnished with fresh parsley and Parmesan cheese.
Notes
- You can substitute turkey or chicken sausage for a leaner option.
- For a vegetarian version, omit sausage and add kidney beans or chickpeas for protein.
- Adjust seasoning with more herbs or spices according to taste.
