  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes

  • 1 cup chopped celery
  • 1 package (9 oz) refrigerated tortellini
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, cook sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, add onion and garlic; sauté until translucent.
  3. Add chicken broth, diced tomatoes, carrots, celery, basil, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes to allow flavors to meld.
  5. Stir in cooked sausage and tortellini. Cook until tortellini is tender, about 5 minutes.
  6. Serve hot, garnished with fresh parsley and Parmesan cheese.
