- 1 lb (450g) of boneless, skinless chicken breasts, cooked and shredded
- 12 oz (340g) of spaghetti or pasta of your choice
- 1 can (10.5 oz) of cream of mushroom or cream of chicken soup
- 1 cup of sour cream or Greek yogurt
- 1 cup of shredded sharp cheddar cheese
- 1/2 cup of grated Parmesan cheese
- 1 small onion, finely chopped
- 3 cloves of garlic, minced
- 1 tbsp of Cajun or Creole seasoning
- 1 tsp of smoked paprika
- 1/2 tsp of red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Start by cooking the chicken breasts thoroughly, then shred them using two forks. In a large pot, bring water to a boil, add salt, and cook the spaghetti until al dente according to package instructions. Drain and set aside.
- In a large skillet over medium heat, sauté the chopped onion and minced garlic until fragrant and translucent. Add the Cajun seasoning, smoked paprika, red pepper flakes, salt, and pepper. Stir well to coat the aromatics with spices.
- Next, stir in the cream of mushroom (or chicken) soup and sour cream, letting the mixture simmer gently. Incorporate the shredded chicken and stir to combine.
- Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the cooked pasta, chicken sauce, half of the shredded cheddar, and Parmesan cheese. Mix thoroughly.
- Transfer the mixture into a greased baking dish. Top with the remaining cheddar cheese and some extra Parmesan if desired.
- Bake uncovered for 20-25 minutes, or until the cheese on top is bubbly and golden brown. Garnish with freshly chopped parsley before serving.
Notes
- You can adjust the spice level by increasing or reducing the red pepper flakes.
- For a creamier texture, add extra sour cream or shredded cheese on top before baking.
- This dish can be prepared ahead of time and refrigerated until ready to bake.
