  • Total Time: 2 hours
  • Yield: 8 servings

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 packet (about 2 ¼ teaspoons) dry active yeast
  • ½ cup warm milk
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • ½ teaspoon salt
  • 1 cup fresh raspberries or frozen raspberries (thawed)
  • For the lemon filling:
  • ⅓ cup granulated sugar
  • 2 tablespoons grated lemon zest
  • 2 tablespoons lemon juice
  • For the cinnamon swirl:
  • 2 teaspoons ground cinnamon
  • For the glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice
  • Optional: additional fresh raspberries and lemon zest for garnish

Instructions

  1. In a small bowl, dissolve the yeast in warm milk and let sit for 5-10 minutes until foamy.
  2. In a large bowl, combine flour, sugar, and salt. Add melted butter, egg, and yeast mixture. Knead until smooth and elastic, about 8-10 minutes by hand or 5 minutes in a stand mixer with a dough hook.
  3. Cover the dough with a damp cloth and let rise in a warm place for 1 to 1.5 hours until doubled in size.
  4. Prepare the lemon raspberry filling by mixing sugar, lemon zest, and lemon juice. Gently fold in the raspberries.
  5. Preheat oven to 375°F (190°C). Punch down the dough and roll into a 14×9 inch rectangle.
  6. Spread lemon raspberry filling evenly over the dough. Sprinkle cinnamon over the filling.
  7. Tightly roll the dough from the longer side and cut into 1.5-inch slices.
  8. Arrange slices in a greased baking dish. Bake for 20-25 minutes until golden brown.
  9. Let cool slightly while preparing the glaze by mixing powdered sugar with lemon juice. Drizzle over warm rolls.

Notes

  • Use high-quality fresh or frozen raspberries for best flavor.
  • Adjust lemon juice and zest to your preferred tanginess.
  • Ensure dough rises fully for fluffy rolls.
  • Thicken or thin the glaze by adjusting powdered sugar or lemon juice.
