- For the glaze:
- 1 cup powdered sugar
- 2-3 tablespoons lemon juice
- Optional: additional fresh raspberries and lemon zest for garnish
Instructions
- In a small bowl, dissolve the yeast in warm milk and let sit for 5-10 minutes until foamy.
- In a large bowl, combine flour, sugar, and salt. Add melted butter, egg, and yeast mixture. Knead until smooth and elastic, about 8-10 minutes by hand or 5 minutes in a stand mixer with a dough hook.
- Cover the dough with a damp cloth and let rise in a warm place for 1 to 1.5 hours until doubled in size.
- Prepare the lemon raspberry filling by mixing sugar, lemon zest, and lemon juice. Gently fold in the raspberries.
- Preheat oven to 375°F (190°C). Punch down the dough and roll into a 14×9 inch rectangle.
- Spread lemon raspberry filling evenly over the dough. Sprinkle cinnamon over the filling.
- Tightly roll the dough from the longer side and cut into 1.5-inch slices.
- Arrange slices in a greased baking dish. Bake for 20-25 minutes until golden brown.
- Let cool slightly while preparing the glaze by mixing powdered sugar with lemon juice. Drizzle over warm rolls.
