- 8 oz orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
- Cook orzo pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add shrimp and cook until pink and opaque, about 3-4 minutes per side.
- Stir in lemon zest and juice, then toss with cooked orzo pasta.
- Add crumbled feta and chopped parsley. Mix well, season with salt and pepper to taste.
- Serve immediately garnished with extra herbs and lemon wedges if desired.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- You can substitute spinach or arugula for a greens variation.
