- 2 pounds beef chuck, cut into chunks
- 2 tablespoons olive oil
- 1 onion, diced
- 3 carrots, sliced
- 3 potatoes, cubed
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add beef chunks and brown on all sides. Remove and set aside.
- In the same pot, sauté onions and garlic until translucent.
- Add carrots and potatoes, cook for 5 minutes.
- Return beef to the pot, add beef broth, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer covered for 1.5 to 2 hours until beef is tender.
- Garnish with fresh parsley and serve hot in a cauldron-shaped bowl.
Notes
- You can add mushrooms or peas for extra flavor.
- Serve with crusty bread for a complete meal.
