Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef chunks and brown on all sides. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add carrots and potatoes, cook for 5 minutes.
  4. Return beef to the pot, add beef broth, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer covered for 1.5 to 2 hours until beef is tender.
  6. Garnish with fresh parsley and serve hot in a cauldron-shaped bowl.
