- 3 ripe bananas, mashed
- 1 cup Greek yogurt
- 2 eggs
- 1/2 cup honey or maple syrup
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract

- Optional: chopped nuts, chocolate chips, or dried fruit
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan with oil or non-stick spray.
- In a large bowl, mash the ripe bananas until smooth.
- In another bowl, combine Greek yogurt, eggs, and honey until well blended.
- Add the mashed bananas and vanilla extract to the yogurt mixture. Stir to combine.
- Whisk together flour, baking soda, and salt in a separate bowl.
- Gradually add dry ingredients to wet ingredients, stirring gently until just combined.
- If desired, fold in chopped nuts, chocolate chips, or dried fruit.
- Pour the batter into the prepared loaf pan. Bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 15 minutes, then transfer to a wire rack.
Notes
- Store in an airtight container at room temperature for 1-2 days, or refrigerated up to 1 week.
- Wrap slices tightly and freeze for longer storage.
- Reheat slices in microwave or oven for a warm treat.
