Instructions
- In a large mixing bowl, combine the cottage cheese, eggs, and olive oil. Mix until well blended.
- In a separate bowl, whisk together the flour, baking powder, salt, and optional herbs.
- Gradually add the dry ingredients into the wet mixture, stirring until a dough forms. The dough should be soft but not overly sticky. Add more flour if needed.
- Divide the dough into equal portions, then roll each into a ball.
- Using a rolling pin, flatten each ball into a thin circle about ¼ inch thick.
- Heat a skillet or griddle over medium heat and lightly brush with olive oil.
- Carefully transfer the rolled-out dough to the hot pan. Cook for 2-3 minutes on each side, or until golden brown spots appear.
- Brush with additional olive oil if desired for extra flavor. Serve warm.
Notes
- Let the flatbreads cool completely before storing.
- Store in an airtight container or seal in a plastic bag for up to 3 days in the refrigerator.
- Reheat in a skillet or toaster for a fresh-like texture.
