This wholesome flatbread is packed with protein, making it a nutritious choice for snacks, wraps, or side dishes.

  • Total Time: 20 minutes
  • Yield: 6 flatbreads

Ingredients

Scale
  • 1 cup of cottage cheese
  • 1 cup of all-purpose flour or whole wheat flour for a healthier option
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional herbs and spices: garlic powder, oregano, or basil
  • Olive oil for brushing

Instructions

  1. In a large mixing bowl, combine the cottage cheese, eggs, and olive oil. Mix until well blended.
  2. In a separate bowl, whisk together the flour, baking powder, salt, and optional herbs.
  3. Gradually add the dry ingredients into the wet mixture, stirring until a dough forms. The dough should be soft but not overly sticky. Add more flour if needed.
  4. Divide the dough into equal portions, then roll each into a ball.
  5. Using a rolling pin, flatten each ball into a thin circle about ¼ inch thick.
  6. Heat a skillet or griddle over medium heat and lightly brush with olive oil.
  7. Carefully transfer the rolled-out dough to the hot pan. Cook for 2-3 minutes on each side, or until golden brown spots appear.
  8. Brush with additional olive oil if desired for extra flavor. Serve warm.

Notes

  • Let the flatbreads cool completely before storing.
  • Store in an airtight container or seal in a plastic bag for up to 3 days in the refrigerator.
  • Reheat in a skillet or toaster for a fresh-like texture.
  • For longer storage, freeze and reheat as needed.
