- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/2 cup cream cheese
- 1 teaspoon cinnamon
- 2 tablespoons apple cider
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, cinnamon, nutmeg, cloves, baking soda, and salt.
- In a separate bowl, cream butter and brown sugar until light and fluffy. Add egg, apple cider, and vanilla; mix well.
- Gradually add dry ingredients to wet ingredients until combined.
- Drop spoonfuls onto prepared baking sheets and flatten slightly.
- Bake for 12-15 minutes until edges are golden. Cool completely.
- For the filling, beat butter and cream cheese until smooth. Gradually add powdered sugar, cinnamon, and apple cider until creamy.
- Spread filling onto the flat side of one cookie and top with another. Serve and enjoy.
