  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 cup cream cheese
  • 1 teaspoon cinnamon
  • 2 tablespoons apple cider

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cinnamon, nutmeg, cloves, baking soda, and salt.
  3. In a separate bowl, cream butter and brown sugar until light and fluffy. Add egg, apple cider, and vanilla; mix well.
  4. Gradually add dry ingredients to wet ingredients until combined.
  5. Drop spoonfuls onto prepared baking sheets and flatten slightly.
  6. Bake for 12-15 minutes until edges are golden. Cool completely.
  7. For the filling, beat butter and cream cheese until smooth. Gradually add powdered sugar, cinnamon, and apple cider until creamy.
  8. Spread filling onto the flat side of one cookie and top with another. Serve and enjoy.
