- 1 onion, chopped
- 3 carrots, sliced
- 2 zucchinis, chopped
- 1 bell pepper, diced
- 2 cups spinach, chopped
- 4 cups vegetable broth
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic until fragrant and translucent.
- Add carrots, bell pepper, and zucchini, cook for 5-7 minutes until slightly tender.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- Add spinach and cook for another 2 minutes.
- Season with salt and pepper, garnish with fresh herbs, and serve hot.
Notes
For a bolder flavor, add a pinch of red pepper flakes or a splash of lemon juice before serving.
