- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans, drained
- 1 can corn kernels, drained
- 1 cup beef broth
- 1 packet taco seasoning
- Optional toppings: shredded cheese, sour cream, chopped cilantro, crushed tortilla chips
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic; cook until translucent.
- Stir in diced tomatoes, black beans, corn, beef broth, and taco seasoning. Bring to a boil.
- Reduce heat and simmer for 20 minutes, allowing flavors to meld.
- Serve hot, garnished with cheese, cilantro, sour cream, or tortilla chips as desired.
Notes
For a spicier version, add diced jalapenos or hot sauce. Customize toppings based on preference. Can be made vegetarian by replacing beef with plant-based ground meat or extra beans.
