- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup mushroom slices (optional)
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and paprika, then brown on both sides until golden. Remove and set aside.
- In the same skillet, sauté onions and garlic until fragrant. Add mushrooms if using and cook until tender.
- Pour in chicken broth and bring to a simmer. Return chicken to the skillet, cover, and cook on low for 20 minutes until chicken is cooked through.
- Meanwhile, cook rice according to package instructions.
- Serve the chicken over rice, pour gravy from the skillet over top, and garnish with fresh parsley.
