- 1 prepared pizza dough
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 cup shredded Gruyere cheese
- 1/2 cup shredded mozzarella cheese
- Fresh thyme leaves for garnish
- Salt and pepper to taste
Instructions
- Preheat oven to 450°F (230°C).
- In a skillet, heat olive oil over medium heat. Add onions and cook slowly, stirring often, until caramelized, about 25 minutes. Add sugar, salt, and pepper in the last 10 minutes.
- Roll out the pizza dough on a baking sheet or pizza stone.
- Spread the caramelized onions evenly over the dough.
- Sprinkle shredded Gruyere and mozzarella cheeses on top.
- Bake in the preheated oven for 12-15 minutes until crust is golden and cheese is bubbly.
- Garnish with fresh thyme leaves before serving.

- For extra flavor, add a splash of sherry or balsamic vinegar while caramelizing onions.
