- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 2 cups shredded cheddar cheese
- 1 cup milk or heavy cream
- 4 slices bacon, cooked and crumbled
- 2 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- Salt and pepper to taste
- Chopped green onions and additional shredded cheese for topping
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic; cook until softened.
- Stir in beef broth, diced tomatoes, Worcestershire sauce, smoked paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add shredded cheddar cheese and milk or heavy cream; stir until cheese melts and soup is creamy.
- Serve hot, topped with crumbled bacon, chopped green onions, and extra cheese.
Notes
- You can substitute bacon with sautéed mushrooms for a vegetarian option.
- For thicker soup, blend a portion of it and stir back into the pot.
