Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together soy sauce, honey, garlic, and ginger.
- Place chicken on a sheet pan lined with parchment paper.
- Arrange pineapple and bell peppers around the chicken.
- Brush the chicken generously with the soy glaze.
- Drizzle vegetables with olive oil and season with salt and pepper.
- Bake for 25-30 minutes until chicken is cooked through and caramelized.
- Garnish with sliced green onions before serving.
Notes
- Use fresh pineapple for a sweeter flavor; canned pineapple can be used but drain well.
- Adjust honey for desired sweetness.
