- 4 boneless, skinless chicken breasts
- 1 cup coconut milk
- 1/4 cup lime juice

- Fresh cilantro and lime slices for garnish
Instructions
- Place chicken breasts in the crockpot.
- Mix coconut milk, lime juice, garlic, lime zest, salt, and pepper in a bowl, then pour over chicken.
- Cook on low for 6 hours or until chicken is tender.
- Shred chicken and stir in shredded coconut.
- Serve garnished with cilantro and lime slices.
Notes
- For a thicker sauce, remove lid during the last 30 minutes of cooking to reduce the liquid.
- Great served over rice or with a fresh salad for a complete meal.
