  • Total Time: 1 hour 25 minutes
  • Yield: 1 loaf

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • Optional: chopped walnuts or chocolate chips for added texture

Instructions

  1. In a large mixing bowl, mash the ripe bananas until smooth. Add the melted butter, brown sugar, eggs, and vanilla extract. Whisk everything together until well combined.
  2. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry mixture into the wet ingredients, stirring gently until just combined. Do not overmix.
  3. In a small bowl, mix some additional cinnamon with a tablespoon of sugar or brown sugar for a more pronounced swirl. Set aside.
  4. Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture on top, then add the remaining batter and finish with the rest of the cinnamon swirl. Use a knife or skewer to gently swirl the cinnamon into the batter for a marbled effect.
  5. Preheat your oven to 350°F (175°C). Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for about 10 minutes, then transfer to a wire rack.

Notes

  • Use very ripe bananas for maximum sweetness and flavor.
  • Don’t overmix the batter; mixing just until combined keeps the bread tender.
  • Add nuts or chocolate chips for extra texture and flavor.
  • Increase the cinnamon in the filling for a more pronounced swirl.
