Instructions
- In a large mixing bowl, mash the ripe bananas until smooth. Add the melted butter, brown sugar, eggs, and vanilla extract. Whisk everything together until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry mixture into the wet ingredients, stirring gently until just combined. Do not overmix.
- In a small bowl, mix some additional cinnamon with a tablespoon of sugar or brown sugar for a more pronounced swirl. Set aside.
- Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture on top, then add the remaining batter and finish with the rest of the cinnamon swirl. Use a knife or skewer to gently swirl the cinnamon into the batter for a marbled effect.
- Preheat your oven to 350°F (175°C). Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for about 10 minutes, then transfer to a wire rack.
