Ingredients

  • 4 slices of your favorite bread (whole wheat, white, or sourdough)
  • 4 large eggs
  • 4 slices of crispy bacon
  • 1 cup shredded cheese (cheddar, American, or your preferred meltable cheese)
  • 1 tablespoon butter or margarine
  • Salt and pepper to taste
  • Optional: chopped chives or herbs for garnish

Instructions

  1. Cook the bacon until crispy and set aside. Scramble the eggs with a pinch of salt and pepper, then set aside.
  2. Heat a skillet over medium heat and add a little butter. Toast the bread slices until golden brown on each side, then remove and set aside.
  3. In the same skillet, pour in the scrambled eggs and cook gently, stirring occasionally until fluffy. Remove from heat.
  4. Spread butter on one side of two bread slices. Place one slice, buttered side down, on the skillet. Layer with shredded cheese, scrambled eggs, bacon, and more cheese. Top with the second bread slice, buttered side up.
  5. Cook the sandwich over medium heat, pressing lightly to ensure even grilling. Grill for about 3-4 minutes on each side until golden brown and cheese is melted. Use a spatula to flip carefully.
