- 2 cups cooked shredded chicken
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1/2 teaspoon red pepper flakes
- 4 large flour tortillas
- 1 cup shredded carrots
- 1/2 cup chopped cilantro
- 1/4 cup chopped peanuts
- Sliced cucumbers for garnish
Instructions
- In a bowl, mix peanut butter, soy sauce, lime juice, honey, and red pepper flakes to make the peanut sauce.
- Combine shredded chicken with the sauce until well coated.
- Lay out tortillas and evenly distribute the chicken mixture on each.
- Add shredded carrots, cilantro, and peanuts over the chicken.
- Roll up the tortillas tightly to form wraps.
- Slice in half and garnish with sliced cucumbers and extra herbs if desired.
Notes
- Adjust spice level by adding more or less red pepper flakes.
- For a vegan version, substitute chicken with tofu or tempeh.
