- 1 pound ground beef or turkey
- 1 small onion, chopped
- 2 cups shredded cheddar cheese
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 package frozen tater tots (about 32 oz)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: chopped green onions or fresh herbs for garnish
Instructions
- In a large skillet, heat olive oil. Add the chopped onion and cook until translucent. Add ground beef or turkey, season with salt and pepper, and cook until browned. Drain excess fat if necessary.
- In a bowl, combine the cream of mushroom and cream of chicken soups. Mix well, then stir in the cooked meat mixture and 1 cup of shredded cheddar cheese.
- Preheat oven to 375°F (190°C). Spread the meat and soup mixture evenly in a greased baking dish. Arrange the frozen tater tots on top in an even layer. Sprinkle with remaining cheese.
- Bake uncovered for 30-35 minutes or until tater tots are golden and crispy. For extra crispiness, finish with a few minutes under the broiler, watching carefully to prevent burning.
