Instructions
- Preheat oven to 400F (200C). Line a baking sheet with parchment paper.
- Arrange sweet potato slices on the baking sheet.
- Roast for 20-25 minutes until edges are crispy.
- Remove from oven and top each round with feta cheese.
- Drizzle honey over the feta-topped sweet potatoes.
- Serve warm or at room temperature.
Notes
For added flavor, sprinkle chopped fresh herbs like thyme or parsley before serving. You can also experiment with balsamic glaze instead of honey for a tangy twist.
