- 1 tablespoon cornstarch (optional, for thickening)
- Chopped green onions and sesame seeds for garnish
Instructions
- Place chicken breasts or thighs into the crockpot.
- Add pineapple chunks, soy sauce, honey, ketchup, garlic, and ginger.
- Cover and cook on low for 4-5 hours until chicken is tender and easily shredded.
- Shred the chicken with two forks and mix well with the sauce.
- Optional: In a small bowl, dissolve cornstarch in a bit of water and stir into the crockpot. Cook for an additional 10 minutes to thicken the sauce.
- Serve hot over rice or with your favorite sides, garnished with chopped green onions and sesame seeds.

- For a thicker sauce, add cornstarch mixed with water towards the end of cooking.
