- 2 lbs chicken breasts, sliced
- 1/2 cup sweet chili sauce
- 1 cup coconut milk
- Juice of 2 limes
- 2 tbsp honey
- 1 tbsp soy sauce
- 1/4 cup shredded coconut
- Fresh cilantro leaves
- Lime wedges for garnish
Instructions
- Marinate the chicken slices in half of the sweet chili sauce for 15 minutes.
- Cook the chicken over medium heat until fully cooked and slightly charred, about 6-8 minutes.
- In a small saucepan, combine coconut milk, lime juice, honey, and soy sauce. Bring to a simmer and cook until slightly thickened, about 5 minutes.
- Drizzle the coconut lime sauce over the cooked chicken and sprinkle with shredded coconut and cilantro.
- Serve the chicken on a plate or bowl, garnished with lime wedges and additional sauce if desired.
Notes
- You can substitute chicken thighs for breasts for more flavor.
- Adjust spice level by adding chili flakes to the sauce.
- Serve with steamed rice or vegetables for a complete meal.
