Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add chicken pieces and cook until golden brown, about 5-6 minutes.
- Stir in garlic and ginger; cook for 1 minute until fragrant.
- Add brown sugar, soy sauce, and rice vinegar; stir to coat the chicken evenly.
- Mix in pineapple chunks and simmer for 5-7 minutes until the sauce thickens and chicken is cooked through.
- Garnish with chopped green onions and sesame seeds if desired. Serve hot with rice or your favorite side.

- Adjust sweetness by varying the brown sugar amount as preferred.
- For extra flavor, add red pepper flakes for a spicy kick.
- Use fresh pineapple for better flavor but canned works fine.
