- 200g spaghetti or your choice of pasta
- 2 cups fresh spinach chopped
- 1 cup cherry tomatoes halved
- 3 cloves garlic minced
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add cherry tomatoes and cook until they soften, about 3-4 minutes.
- Stir in chopped spinach and cook until wilted, about 2 minutes.
- Combine cooked pasta with the sautéed vegetables. Toss well.
- Season with salt and pepper, then sprinkle with grated Parmesan and garnish with basil.
- Serve warm and enjoy!
Notes
- You can add red pepper flakes for a spicy kick.
- Use vegan cheese or nutritional yeast for a dairy-free version.
- For extra protein, add grilled tofu or chickpeas.
